We planned a special meal at home for New Year's Eve. We had a lot of fun prepping the meal together. Adam did a great job grilling and I of course spent a lot of time with the risotto. So time consuming, but so worth it.
Here's what we dined on -
- French Bread with garlic and butter, grilled
- Surf and Turf of grilled cayenne coated shrimp with New York Strip
- Champagne Risotto with asparagus and bacon
- Prosecco
Here's the recipe for the Champagne Risotto-

I was looking for something a little different than our usual lemon and garlic risotto. Most risotto recipes I found either involved squash or mushrooms, both of which Adam hates.
I made a few changes, and used bacon instead of prosciutto and regular onion instead of shallot. They're very similar flavors though, so it worked well and was delicious.
