And We're Composting!
I've been wanting to compost for a while now, but just haven't gotten around to getting it set up.
Thanks to Eureka Recycling and my friend Caitlin, we are now a composting household! We have the Earth Machine.

Weekend Recap: Stillwater, Screendoor & Fishing
Adam and I figured out that this has been our fourth weekend in a row at
home! Quite the rarity in the summer! Or any time of year really... We
had such a fun weekend together. It was a perfect mixture of productivity and relaxation.
On Friday, Adam went fishing in the afternoon with a friend from work. I ran some errands after work, and then hung out with Chester. Adam was tired from being out in the sun all day, so we just had a relaxing evening in watching the Twins game.
Saturday, we ventured to Stillwater for a few hours for some antique shopping or "browsing" as Adam put it. We're looking for an old hutch or china cabinet for our kitchen. Unfortunately, or fortunately in Adam's opinion, we didn't find any we liked. We also enjoyed lunch out on the deck at the Freight House Restaurant. Then, I got dessert at the CherryBerry yogurt bar. Yum! I had a combo of birthday cake frozen yogurt, cheesecake frozen yogurt, and mango sorbet topped with sprinkles, yogurt chips, and blackberries. Adam thought it was a huge rip-off because you pay per ounce ($0.45 per oz to be exact), but I thought it was delicious! We, I shared, enjoyed it down by the very flooded river.
Next, we stopped at Target to make a few returns and get a few items before spending hours at Menards. Okay, so it was probably only an hour, but it felt like hours. We looked at lights for outside, screen doors, garage doors, door knobs, paint, and more. Many fun house projects in our future... Does it ever end? We ended up picking out a new screen door for the back door, specifically with puggy in mind. It has glass in the bottom, so he can look out. I also like that the screen part hides when you close the window on the top part.
It ended up being quite a project to install, but it looks great AND Chester loves it. Though I will miss seeing his little head pop up to look out the old door.
I stayed up late that night picking up the house and organizing
upstairs. It's still a mess, but not as bad of a mess. I still have lots
of clothes to try on and stuff to get rid of though.
Sunday, we had some family stop by for about an hour to see our house. Kim, Alex, Wyatt and Ava were in town, so we enjoyed a nice visit and house tour.
Once they left, we relaxed around the house. I had headache issues all weekend, so it was nice to just lay in bed for a few hours with an ice pack. I was feeling a bit better in the afternoon, so we loaded up the boat and went fishing for a few hours. We got out on Lake Gervais around 4, and came in at 7. It was the perfect time of night. Adam found a good bass fishing spot. He caught a bass on his first cast! I even caught some with my new ultra light! Including a super tiny baby bass on my first drop as well. I was excited! Adam caught 3 bass (2 with his frog lure). I caught 3 (pretty small) bass and 2 sunfish with my hook and worm. It was a really fun time!

Foodie Friday: Garden Lettuce
This week, we enjoyed salads with lettuce from our garden. It was so tender and delicious! I made a homemade vinaigrette with lemon, dijon, garlic, olive oil and a little honey. Yum!
We decided next year we'll plant a lot more lettuce! It's awesome.

Dang Household Updates: June Edition
Chester:
- Our little baby guy is going to be 2 in 3 weeks! We can't believe it. Of course, I already have his birthday presents (a few bones and Tuffy toys, but shh don't tell him).
- Lately, Chester has really enjoyed laying by the fan and open window in bed while I read.
- We've also discovered that Chester likes strawberries and tomatoes (minus the skin). He does not like lettuce, which is surprising as he loves to eat grass. Strange little puppy.
Adam:
- Adam is loving having a fishing boat to use! He's been going out fishing every Friday afternoon (he gets off early because of summer hours) with a friend from work. I've been out with him a few times as well, which has been a lot of fun. Poor Chester doesn't get to come with though. He'd probably be stressed.
- The grill master has also been busy this summer. We try to grill out at least once a week, often twice or more. So far he's made some awesome Jucy Lucys, meatballs, hamburgers, brats, pizza, steaks, shrimp, veggies, pork chops and garlic bread. We have some new recipes that I'm eager to try as well. Grilling is awesome.
Stef:
- I FINALLY have all our hotels booked for our Europe trip in September. In the past week or so I've booked for Dublin, Doolin and Galway. I think Adam is happy he doesn't have to hear my hotel debates anymore. Since we're staying in 5 different hotels throughout the trip, there were quite a few of them.
I'm most excited for our hotels in Doolin, near the Cliffs of Moher, and Galway. In Doolin, The Aran View Hotel is right along the ocean cliffs and you can see the Cliffs of Moher in the distance. In Galway, The Salthill Hotel is right by the ocean and Salthill Promenade.
It's less than 3 months away!!!
- In other exciting news, my dear friend (since 5th grade!) Laura is engaged! Her and Ethan are planning on getting married next summer. I'm so excited for her! And of course I'm a bit jealous too that she gets to plan a wedding. For me, it was a stressful experience, yet lots of fun - especially in the beginning.

Weekend Recap: Father's Day Weekend Fam Visit & Twins Game
My fam came up for the weekend for a Twins game and Father's Day.
Friday night, Adam's family also joined us for dinner. Adam made his specialty, Jucy Lucy's. They were delicious! Robin brought an excellent pesto pasta salad. I will definitely need to get that recipe!
For dessert, I made cake balls (as a late birthday dessert for my dad). They were excellent, if I do say so myself. Even Mr. I-don't-like-sweets enjoyed them. It was a lot of fun to all get together.
Saturday morning started out gloomy. Mom and I planned to go pick
strawberries down by Hastings. On the way there, it started pouring. It
didn't let up until less than a mile from the berry patch. I'm so glad
we didn't give up and turn around though because we got a lot of picking
in before the rain started there.
We were worried how the rain and storms would effect the Twins-Brewers game at 1. We came prepared with raincoats, but luckily we didn't need them. The only casualty from rain was batting practice. It turned out to be a beautiful afternoon for a game, even though the Twins play was rather lackluster. Because of the rain, I didn't bring the good camera. I wish I would have known it was going to be nice!
Before the game even started, when we were walking back to our seats from getting pop and food for Stine, we saw the legendary former Twin Tony Oliva. Other people were getting their pictures taken with him, so we did too! Yes, we're cool.
After the game, we returned home for naps and relaxation. Then, we ventured out to get pizza at Savoy's. Yum!
Back at home, mom, Stine and I played Pug-opoly. You may recall that Adam and I received this pug version of Monopoly from my fam for Christmas. It was pretty much adorable. And fun.
We celebrated Father's Day with brunch at Meritage. We love Meritage.
It's consistently excellent with attentive service. I had cornmeal
pancakes served with a cinnamon walnut butter and I also ordered brunch
potatoes for on the side.
Adam enjoyed the special, pork shoulder hash. I thought it sounded good too, but I'm glad I didn't order it because there was a lot of celery. But Adam likes celery, and said the meal was pretty much amazing.
My dad had Boeuf et Oeuf (Steak and Eggs). Mom and Stine both had Croque Monsieur (toasted ham & cheese w/ Mornay sauce) minus the egg plus frites.
Of course we had to have dessert as well! Mom generously shared the Macaron du Jour which was coffee. I'm pretty much obsessed with anything coffee flavored, but I won't drink coffee. Figure that one out. The macaron was excellent. Maybe I'll have to make some coffee ones next time!
I shared my creme brulee with the table because it was huge.
Christine had mouse au chocolat, but there wasn't much sharing go on. I can't blame her though, and she at least let everyone try a bite.
My fam headed back home around 12:30. Chester, Adam and I spent the rest of the afternoon napping and relaxing. I read for a while, and Adam watched the Twins game. When I was finished with my book, Adam was still watching the Twins game. The rain delay + extra innings made for a very long game. It was on until almost 7 (with a 1:10 start & 15 innings)!

Foodie Friday: Cake Balls
Ok so this is a little late, but I didn't want to ruin the surprise by having it up on the blog.
To celebrate my dad's belated birthday, I made cake balls. Yummy, gooey cake balls.
It was really simple, yet time consuming, and that was even with being lazy and using store bought cake mix and frosting.
First, I baked a regular vanilla cake. After letting it cool for about 20 minutes, I destroyed it. Really. I tore it out of the pan, but it in a bowl, and beat it into crumbs.
Then, I mixed it together with a jar of vanilla frosting with sprinkles (in a separate package on top). I saved the sprinkles for decorating later. Once the frosting was evenly incorporated, I rolled it into 1 - 1 1/2 inch balls. This made about 35 balls. Then, I put them in the freezer over night.
The next evening, I melted some white bark to cover them. I improvised, and stabbed them in the middle with a wooden skewer. This I removed once I placed the covered ball on a sheet of wax paper. To hide the ugly hole, I used a spoon to put on some more bark. I finished it off with sprinkles (while still wet so they would stick).
I repeated this same process with the chocolate bark.
And voila! Yummy cake balls that even Adam enjoyed!

Twins Game: Interleague Play!
We had a great time at the Twins - Phillies game on Tuesday night at
Target Field. Once the sun went down, it got a little chilly, but
luckily I had a Twins sweatshirt with to stay warm. And of course the
traffic to get there was horrendous. Driving from downtown St. Paul to
downtown Minneapolis should take 20 minutes, if that. It took 45.
Luckily, I wasn't driving. Poor Adam...
This time, our seats were in the Grandstand. Adam, the seat snob, has recently decided he doesn't like the Grandstand. But I like the panoramic view they provide. I think it's fun to sit in different parts of the stadium. I get sick of sitting in the same area with the same view. A little outfield action doesn't bother me. But I would hate to sit in the upper level behind home plate. Those seats look awful.
The Phillies made it interesting, but the Twins came away with the win. There was even a surprise appearance by the Philly Phanatic! It was hilarious. Video here
Plus my guy Ben Revere had a great game and there were even three Twins home runs by Span, Willingham and Plouffe. Adam says I have to end the Plouffe hate because he's been playing well lately. But it's so. hard. to let go.
We left in the 7th inning because it was getting late (past 10 pm). On the ride home, we had an interesting conversation about interleague play. I love it. Adam could do without it. I politely reminded him that when we were looking at the Twins schedule to get tickets, this was the one team he wanted to see. Plus, if there was no interleague play, how would we see all the cool ballparks? (Other than going there for a game the Twins aren't playing in)
My #1 ballpark I want to see is AT&T Park (San Francisco Giants). I'm sad that basically all the parks I really want to see are National League parks - PNC (Pittsburgh Pirates), Citizens Bank (Philadelphia Phillies), Coors Field (Colorado Rockies), Nationals Park (Washington Nationals), CitiField (New York Mets), Marlins Park (Miami Marlins). Someday.....

Weekend Recap: Fishing & Hanging out at home
We had a nice low-key weekend at home, which is especially welcome in the chaotic summertime.
Adam's on summer hours at work (four 9 hour days, 1/2 day on Friday), so he enjoyed going fishing with a work friend Friday afternoon. They had pretty good luck and he even caught his first fish on the bait caster - a largemouth bass.
As for me, I ran some errands after work and then hung out with Chester until Adam got home. We were feeling lazy and it was way too hot to cook dinner, so we ordered some Savoy's Pizza - pepperoni and jalepenos. YUM!
On Saturday, Adam and I took the boat out on Lake Phalen. It was a fun time, but sadly we didn't catch anything. And I was all ready too with my new red ultra light pole from Adam. It was freakishly hot out, but nice and breezy on the lake.
Back at home, we relaxed and then made meatballs. Since again, it was so warm, we grilled them! This time they turned out way better than prior attempts. The trick was to freeze them for half an hour, and then use a spatula to flip them on the grill so they wouldn't stick. They were delicious and had a wonderful smoky flavor.
Sunday was just another day at home. We both got a lot of work done around the house, and Chester enjoyed having us around. We attempted to watch the Mad Men finale, but fifteen minutes in a rather inopportune storm caused the satellite to go out. Ugh. What awful timing.

Weekend Recap: Fishing, gardening, friends & cupcakes
Saturday, we took out the fishing boat. Our first stop was at Fleet Farm to pick up a few items like night crawlers. Then, we went to Lake Demontreville to put the boat in. Except all the parking spots across from the boat launch were full. And we didn't have a back up plan. Panic! Frustration! So I pulled out my phone and tried to find something else nearby. Easier said than done. We settled on driving out to Lake Elmo. Only to discover that you needed an annual park pass to get in - which we really didn't want to pay for.
So then we started driving back to St. Paul to go to Lake Gervais. I was looking on my phone and found another lake on the way that had a public launch - Silver Lake. Luckily there were lots of open parking spots when we got there.
It was kind of weedy and small but we were so happy to get the boat in the water we didn't even care! We had been driving around for over an hour in search of a lake and had contemplated just giving up and going home.
Adam launched the boat with great ease, and we were off. I even did some fishing! I think it's the first time for me in like 20 years. We got tons of bites but didn't catch anything in our first spot. Adam was getting sick of putting worms on for me.
Before moving on, we had a lunch break. I had packed some yummy sandwiches and pita chips.
I also did some reading while Adam fished with his bait caster. It felt great to be out on the water in the sun.
Our next spot was much more successful. Sure, the fish were tiny, but it was better than catching nothing! I caught 6 fish and Adam caught about 10. All in about 30 minutes (we tooks turns with the ultra light pole).
We headed in around 3:30. Back at home, we took Chester for a walk and I made the buttercream frosting for the cupcakes.
They were cute and flavorful. Adam's contribution was putting the lime zest on the top.
Then it was off to Minneapolis for a going away party for our friend Alan. He'll be in Japan this summer doing research. Unfortunately for us, 94 was closed going east due to road construction. A fifteen minute trip turned into 45 minutes.
We had a fun dinner with amazing stirfry with my friends from college.

It was wonderful to sleep in on Sunday morning! We lounged for a bit before finishing up our weeding and garden work. All the vegetables and seeds are officially in the ground. Finally. I'll have to snap a few photos before the weeds take over again. I still have a few flowers to plant though.
